Did you miss out on the food demonstration by Seascape's Chef Henry last week in our park? Our chef gave us a little treat for World Water Day and showed us how to make Pan-Seared Seasoned Ahi, Green Papaya Slaw with Lilikoi Mint Dressing drizzled with Wasabi Mustard. If you missed out here is the recipe to make this:


Green Papaya Slaw:

Julienned green papaya, cucumber, carrots, and red cabbage.


Lilikoi Mint Dressing:


1/4 cup Passion Fruit Juice

1/2 cup Canola Oil

1 tsp. Passion Fruit Wasabi Mustard

2 tsp. chopped Sweet Maui Onions

1/2 tsp. Honey

1 tsp. Chopped Mint

Salt & Pepper


In a large mixing bowl, add vegetables and set aside. Using a Blender, combine Lilikoi Fruit Juice, Wasabi Mustard, Maui Onions, Honey and Canola oil. Blend until smooth. Add Mint, Salt & Pepper to taste. Toss dressing with vegetables before serving. Season Ahi with Island Citrus & Herb Sea Salt and sear in a hot sauté pan.
