Have you ever tried Lilikoi(passion fruit) Pepper Jelly? It’s by far one of my favorites for cooking. It has a great flavor, a little sweet and a little pepper kick. It’s great on anything from chicken, pork, steak, fish and even steamed veggies. One evening, I was about to cook dinner and saw a jar of Lilikoi Pepper Jelly. My ideas started racing through my brain. Before I knew it, I was slathering it all over my salmon. Ever since, this has become one of my favorite ways to use the Lilikoi Pepper Jelly. The jelly coats the salmon giving it a very colorful presentation, let alone the flavor will be sure to tantalize your taste buds. This quick and easy dinner will have friends and family asking for the recipe!
Lilikoi Pepper Glazed Alaskan Salmon:
1 teaspoon black pepper
1 teaspoon garlic salt
2 garlic cloves minced
½ cup Lilikoi Pepper Jelly
1 Alaskan Salmon Fillet (2½ pounds)
Pre-heat oven to 350⁰
Place salmon in a large foil-lined baking pan; sprinkle black pepper, garlic salt and minced garlic over salmon. Bake on 350⁰ for 20-25 minutes or until fish flakes easily with fork. Then spread Lilikoi Pepper jelly over fillet. Place back in oven and broil 2-5 minutes until jelly is melted and glazed to perfection. Great for the holidays or any occasion.
